Mexican Recipes with Hina Dave

Planning in throwing a party with Mexican food? You're exactly where you need to be, for Hina Dave's recipes for Mexican food, complete with a mouth-watering desert, are easy to follow with delicious end results. And we should know because we were there to taste, make that hog, them all!

1. Seven layer Dip

1 15 oz. can of Refried beans

Light Sour cream

I container Guacamole dip or you can make it fresh

Hot sauce (Pace or homemade)

Scallions, black olives, tomatoes, cilantro


1. Warm up the beans add salt and paprika (optional) and let it cool down.

2. In the meantime open other ingredients and line them up on the counter. Chop scallions, tomatoes and cilantro.

3. Take clear plastic cups and start your layers by spooning in the beans first. Then layer the sour cream, guacamole and salsa. Add olives, scallions, tomatoes and cilantro on top and lastly add corn chip or two.

4. Leave it in the fridge until your guests arrive.

3/4 carton of Simple Truth organic Veg broth from Kroger

1 15 oz. can of fire roasted crushed tomatoes, or any regular tomatoes diced tomatoes will work as well

1 can of pinto beans

1 can of kidney beans (any kind beans really speaking)

1 can of corn

Celery, onions, kale or spinach

Lime, paprika, garlic, salt and cumin




1. Sauté all verges, add beans tomatoes, broth and spices.

2. Simmer everything for at least couple of hours or more.

Garnish with Avocado, sour cream, corn chips, cilantro.


Use enameled Dutch oven it holds the heat well.

You can transfer the soup in the slow cooker for the party.

Set up all garnish items closer to the soup so the guests can help themselves.

2 cans (8 oz. each) Pillsbury® refrigerated crescent dinner rolls

2 packages (8 oz. each) cream cheese, softened

1 ½ cups sugar

1 teaspoon vanilla

½ cup butter, melted

1 tablespoon ground cinnamon


Heat oven to 350°F.

Unroll 1 can dough. Place in bottom of ungreased 13x9-inch (3-quart) glass baking dish. Stretch to cover bottom of dish, firmly pressing perforations to seal.

In medium bowl, beat cream cheese and 1 cup of the sugar with electric mixer on medium speed until smooth. Beat in vanilla. Spread over dough in baking dish.

Unroll second can of dough. Carefully place on top of cream cheese layer. Pinch seams together.

Pour melted butter evenly over top. Mix remaining 1/2 cup sugar with the cinnamon, and sprinkle evenly over butter.

Bake about 30 minutes or until center is set.

Eat warm or cold.

1 bag of Chopped frozen or fresh spinach or Kale

Mix of fresh red/green/yellow peppers and onions cut lengthwise

Fresh zucchini and squash cut into small slices

Fresh tomatoes, jalapenos Chopped

Enchilada sauce (tomatillo or red)

Sour cream, cumin, salt

Corn tortilla and Jack cheese


1. Sauté the spinach with some salt, garlic add in the peppers and onions until soft. Keep this mixture on the side.

2. Boil the enchilada sauce and leave it on the side. (you can add sour cream for creaminess)

3. Take aluminum/baking tray.

4. Cover the bottom of the tray some enchilada sauce and lay corn tortilla one at a time at the bottom covering the entire tray.

5. Start adding your spinach mix and layer the squash and zucchini mix.

6. Ladle in some more sauce (not too much) on top of the veges, add cheese layer.

7. Repeat the same layers again one more time.

8. Finish it with layer of cheese. Cover and bake it for 45 minutes at 350 degrees and keep it warm until your guests arrive.


Enchilagna is the name given by me since I thought it a mix of enchilada and lasagna.

Quinoa, flax seed corn tortillas (Market Street) or use any kind.

4.1 Black Bean salsa:

1 Can of Black beans and Corn

1 fresh mango

Some chopped red/green peppers, onions, tomatoes and jalapenos

Ground cumin, lime, salt, cilantro, garlic


1. Mix black beans and corn and add in the pepper mix.

2. Cut mangoes into slices and then chop into small pieces mix it with the beans.

3. Add lime, cilantro, salt and ground cumin.

4. Add paprika if you want to

4.2 Guacamole:

Fresh Avocadoes (3 big) - firm

Chopped onions, tomatoes, cilantro, ground cumin, salt


1. Cut avocadoes into small prices and leave it in the container with the one pit. This way they will not turn black.

2. Add rest of the ingredients and keep it refrigerated until you are ready to use.

4.3 Homemade Salsa:

1 can of whole tomatoes

One or two onions

Lime, jalapenos, cilantro (one bunch), garlic, whole cumin and salt


1. Blend everything to gather, make sure it’s not blended too fine.

Tacos: when you are ready to eat, warm up tortilla and add your toppings to your tacos.
